I have a Samsung Bar Plus 128GB USB on my keychain along with my car’s keyfob. It’s formatted ExFAT. What files should I store on it for those just-in-case moments? Or what files would be good to be stored in an encrypted Veracrypt container as part of my EDC?

Ventoy plus a bunch of Linux live and recovery ISOs. Might also be a good idea to throw in a KeePassXC standalone executable and a vault with some of your most critical passwords.
